Used a shoulder, cut it in a spiral to flatten it in one big sheet of pork, took some garlic confit and applied in liberal amounts, salt, pepper, chili, and some of the prunes I made this summer, ginger, lagavullin and orange zest in there, rolled back up, kinda like a cinnabun, and tied up.

10h at 80*c.
