Dosierung:

Beutelinhalt fur 2 (Sauerbratenbeize und 1-2 kg Braten.

Das feine Ostmann-Rezept

250 g karotten, Sellerie, u. Zweibelwurfel zusammen mit 700 ml wasser, 200 ml weinessig und der Halfte des Beutelenhaltes aufkochen. Beize bei schwacher Hitze 10 Min. ziehen lassen. 1 kg Rinderschulter darin 2 Tage einlegen. Das Fleisch in den Kuhlschrank stellen. AnschlieSend den Sauerbraten wie ein Schmerbraten zubereiten.

(I'm assuming you're only interested in the recipe)

Dice 250 g of carrots, celery and onions. Cook together with 700 ml water, 200 ml wine vinegar and a half of the sachet's contents. Let the marinade strain(?) on a small fire for ten minutes. Take 1 kg of shoulder meat beef and put in the marinade. Leave in refrigerator for 2 days. Afterwards, prepare in an identical manner to braised meat.

Thanks. Most of it is common sense, but the part that confused me is the part about using half the packet's contents. That's what I did last time and the end result seemed rather drab. Why the hell don't they just make smaller packets if you are only supposed to use half? Anyway, screw it I'm gonna use all of it plus some extra vinegar and marinade it longer this time.

I'll send you guys some. :D

Preparing meat this way in Hungary is called doing it "in the way of the hunter", which becomes a bit funny when you do it with lamb or beef.

That is a bit strange indeed. One pack for 1-2 kg of meat, and then they suggest using half of it for 1 kg? Seems to indicate that you can use the full pack anyway.

Or did you omit part of the instruction? The other half to be added later?

or
Beutelinhalt fur 2 (Sauerbratenbeize und 1-2 kg Braten)

That's "alla cacciatora" in italy, same meaning.

But afaik we use wine not vinegar.

And yes you can cook chicken that way too :p

I don't think I omitted anything, and the final sentence of the instructions seems to support that. It does look like I either added the open parenthesis or omitted the close parenthesis though.

I'm gonna add two packets anyway b/c I like a strong flavor.

Here's an English recipe which fundamentally has the same process except it has the raw spices rather than whatever mix is in your packet, and they just leave the marinade to cool rather than 'pickling over a low flame'. Both are probably ok.

Yeah, that looks good. This is the last of these packets that I have so maybe I'll mix up my own next time.
