th receipe up there has the basics, and risotto is about getting the basics right. That's the first dish I learnt to do

there are three cardinal rules to never miss a risotto
- get the proper arborio rice (scotti brand here in France)
- never stop stirring
- 'wet' the rice very progressively ('cover' it, aka, your water level should not exceed the rice level)

all the rest is about little tricks (like batter it at the end firmly to make it really creamy and maybe let the rice overcook a bit at the end by increasing the heat to have a slight crusty layer under it) or what you put in it, of course. I tend to stick to mushrooms (cepes and girolles)

I've been known to use parsnips instead of sweet potatoes, or both!

Lately the cheese has been this sort of extra mature double gloucester, which has a similar taste and texture to parmesan.

Also, I never quite seem to keep to only the one cup of wine...
