Does anyone have any idea?

The bacon sandwich seems to be the most common vegitarian lapse and it generally smells awesome but why is it so damn good?

Bacon is made from Pigs. Pigs eat well. You are what you eat, therefore Pig tastes good.
Bacon is thin pig so the taste is even better.

Things to look out for:
Genetically engineered pigs can consume and hold more water, thus reducing the concentration of pig in your bacon.

I have this amazing "tandoori sprinkle" that I got in India. You just add it to anything and it instantly tastes Tandoori'd. It can be added during cooking or afterwards as a condiment.

I've gone off red meat as I've got older. I like a really good quality bacon, like a maple cured organic bacon or something, but the cheap stuff is flavourless. Nothing beats a great hunk of pork crackling though!


Not sure about bacon curry- I think curry works because the meat is quite bland. Bacon is so salty that the combination with spices could be quite horrid.

What's really nice is to get some tandoori paste (Patak's works well) Mix it half and half with natural yoghurt, then get some lamb cut into chunks, and marinade in the fridge overnight. Next day, skewer them (with veg if you are feeling healthy) then barbeque it. Fucking delicious! Its not that dissimilar to an authentic tandoori as the cooking method is a charcoal method. Yum yum yum! Nice with salad and lemon in pittas

Speaking of currifying stuff.

Tizzy and I saw this amazing recipe for tandoori roast chicken with spicy roast potatoes on Saturday kitchen the other week.

We made it (twice now on a sunday) it's truly amazing.

Basically used that as a rough guide, didn't follow it very closely but the principle was the same. Didn't bother with the coriander thing, just made veg curry to go with it.

Lemon juice and loads (and loads) of garlic in the marinade as well as all the spices was definitely good.

In fact, what I have for tea tonight is left over chicken and the veg curry. - I really should have had breakfast!

I used to use various different pastes all the time then I decided I preferred being able to tailor the spices to my own blends - plus I found them a bit too oily.

It's because it's salty and fatty. Fat carries flavour. A bacon sandwich is satisfyingly greasy and sloppy in texture with a nice chewy centre and juicy salty grease makes it all yummy.

Lemon juice - a fantastic tandoori/tikka marinade ingredient. It's great serving it with some salad and a slice of lemon to squeeze over the meat but sticking some in the marinade just adds that little bit extra.

Not really, I just chuck stuff in depending on what I have/how I feel. :)

Basically curry paste is just oil, spices, garlic and chilli premixed. Which makes life a bit easier.

If I'm making a curry I tend to not bother making the paste. Cook the spices in a bit of oil first to release the flavour - stopping when they start to go dark and then add onion. Cook the onion out then add a load of garlic, fresh chilli etc. then stick whatever meat/veg I'm going to make the curry out of in that.

If I'm marinading I just stick the spices straight into the marinade.

I don't use butter. In fact I pretty much never use butter for anything I don't think I even have any in the house. I just use a bit of light olive oil (light so it doesn't taste too strong). Which isn't authentic but better for you.

`tandoori has a tikka paste though. Although I used to go out with an Indian guy who told me that in india they dont have korma, tikka, tikka masala, fal, or vindaloo. He said most of the food is actually pretty mild there. We've been duped!

Depends where you go. It's an entire sub continent with different regional foods. Go to Kerela and you'll eat alot of coconut, go to Goa and you'll eat spicy food influenced by the Portuguese.

I think it depends where in India you go how hot it is. Varies quite a lot as you'd expect over such a large area.

But yes, most of the curry dishes we have here were invented here by British Asians. :kingfisher:

I think the south is where you get the hotter cuisine, from what I remember, ie Madras. Although I could well have that arse about tit.

There's a really good 'authentic' Indian restaurant in Reading called the Spice oven, who make proper Indian food predominantly from the North I believe but with some other examples. Its lovely!

My boyfriend offered to cook me a curry on our second date, and i was really excited as i thought it would be all authentic, but no, he used the above mentioned sauce. I was so disappointed.

I can cook a variety of curries from a powder form. :D

I couldn't live without curry at least once a week. In Levenshulme, close to us, there is an all-you-can-eat indian buffet. It's great because there are so many authentic dishes you can sample. It's hard to move afterwards though.

Blenders are great for smoothies and soups. I make a lot of soups in winter, so I can keep my body fat up :D

it depends on the soup really- a lentil soup is best half blended to bring out the starch in the lentils which thickens the soup. I tend towards winter vegetable soups which I usually half blend as I don't like them too smooth.

before blenders people would have chopped things more finely to start with, and they would sieve the soup, or leave the bits in. Highly processed food is a modern innovation.Blame Heinz!

My blender is attached to my processor. Once you learn how to use them they are a god send, and modern ones are easy to clean unlike the old 50's and 60's ones where you needed an engineering degree to take them apart.

I had some tom yum at a market in krabi. I was so hungry but it was mindbogglingly, searingly hot thanks to the ratshit peppers in it I couldn't eat it. I can do hot food but this was absolutely taking the piss. Horrible blistering pain and half an hour of painful hiccups isn't my idea of a good meal. you're a scientist, I thought you'd love the measuring. Its very satisfying to perfect the art of cakes or bread. Bread especially because its so easy to get wrong.

I'm not a typical scientist. I hate measuring. Any recipe that requires accuracy is just too boring. I like ideas that have scope for adding your own individual touches. To me the fun of it is that it's a creative art. Just following instructions is boring, takes all the fun away.

I think protein said before that he hates the bits when Delia comes on Saturday Kitchen. I know what he means, although don't feel as stongly about it. All her recipies are so exacting and rigid.

Although I'm more into baking now I've seen them do it on Ready Steady Cook and they just chuck stuff in. All about knowing the consistency you need to have etc.

I also don't own a measuring jug or any scales. :D

Delia is Hitler, forget her. baking isn't that exact because as you rightly say, as long as you the approximate quantities its mostly down to experience and technique. Baking is really satisfying you should seriously try it. Start with some bread rolls or something. Plus bread smells gorgeous when its cooking and tastes fantastic too.

A quick recipe for bacon and pig lovers.

Quickly boil some broccoli spears for about 4 minutes. Then dunk them in cold water until cold, then pat dry with kitchen roll.

Wrap the stalks in a strip of Parma ham (one each), and throw a little grated parmesan over the top. Bake at 190 degrees C for about 6 minutes, until the ham is going crunchy. Take out, drizzle olive oil over them, and eat.
